At Oklava we’ve worked hard to establish a menu that takes traditional Turkish-Cypriot cuisine and gives it a sleek, modern twist. Each dish is constructed with precision and a great deal of testing. We think it’s about time to share some of those recipes with you.
This collection is a celebration of the Turkish-Cypriot kitchen – think Turkish spices, dried fruits and nuts, and the fresh produce (notably lemons) of Greece, but with influences from the Mediterranean, Southern Europe and the Middle East.
Chef Selin Kiazim – drawing inspiration from her grandmother – has been developing recipes and learning traditional techniques from a young age. Her collection for this book will take you on a nostalgic journey from home cooked meals through summers in North Cyprus.
Recipes include Oklava’s popular medjool date butter with bharat spiced bread, as well as its popular pide breads. You’ll also find courgette, feta and mint fritters; crispy pomegranate-glazed lamb breast with yoghurt; chilli-roast cauliflower; and chocolate, prune and cardamom delice.
