At Oklava we’ve worked hard to establish a menu that takes traditional Turkish-Cypriot cuisine and gives it a sleek, modern twist. Each dish is constructed with precision and a great deal of testing. We think it’s about time to share some of those recipes with you.
Chef Selin Kiazim – drawing inspiration from her grandmother – has been developing recipes and learning traditional techniques from a young age. Her collection for this book will take you on a nostalgic journey from home cooked meals through summers in North Cyprus.
Recipes include Oklava’s popular medjool date butter with baharat spiced bread, as well as its popular pides. You’ll also find courgette, feta and mint fritters; crispy pomegranate-glazed lamb breast with yoghurt; chilli-roast cauliflower; and chocolate, prune and cardamom delice.
Additional features include brunch: Oklava-style, family kebabs and the art of Turkish coffee.
